Fillet of Pork with Potato and Apple ‘pomme anna’, Spinach and a Blue Cheese Cream Sauce

Ingredients (serves 2)

  • 1 Pork fillet with all sinew removed
  • 1 large baking potato
  • 1 apple
  • Thyme
  • Butter
  • Wine or cider - a glass
  • Double cream, 50ml
  • A large handful of spinach
  • Blue cheese, about 75 g.

Method

  1. Thinly slice the potato and the apple. Layer the potatoes and apple in a baking tray, placing a few knobs of butter, some thyme and salt and pepper between each layer. You should aim for a minimum of 3 layers of potato.
  2. Place in the oven at gas 7 / 190c for about 30 minutes or until cooked.
  3. Season the pork and seal in a hot frying pan with a little oil in it.
  4. Put the pork into the oven and cook for 10 to 15 minutes, depending how well done you like your pork (it can be served slightly pink).
  5. Remove the pork and leave to rest.
  6. Put the pan the pork was cooked in back onto the stove along with the wine or cider. Reduce by half and add the cream, then reduce by half again.
  7.  Add the blue cheese and salt and pepper to taste.
  8.  Cook a little spinach in some butter. 
  9. Remove the potatoes from the oven and serve with the pork, some spinach and some of the sauce
