Sauté of chicken livers with wild mushrooms and rocket on toast

Ingredients (serves 1)

  • Dozen chicken livers
  • Handful of wild mushrooms
  • Handful of rocket
  • Butter
  • Oil
  • Slice of bread
  • Chopped parsley
  • Salt and pepper

Method

  1. Heat the oil and add the butter in a frying pan or wok. Add the mushrooms and cook until soft.
  2. Add the chicken livers and carry on cooking on a high heat for 3 minutes.
  3.  While the livers are cooking, toast the bread in either a griddle pan or under the grill.
  4. Add the rockets and chopped parsley to the livers and serve on top of the toast, seasoning with salt and pepper.
